Crispy Vegetable Salad

 


4 cups broccoli florets

2 large carrots, peeled and thinly sliced

1 large red bell pepper, seeded and sliced thin

1 bunch radishes, cut in half

2 stalks celery thinly sliced

1 bottle fat-free Italian salad dressing

1 bag of Salad Mix

 

Combine broccoli, carrots, red bell pepper, radishes, and celery with salad dressing.  Cover with plastic wrap and refrigerate for at least 15 minutes.  Toss with salad mix and serve immediately.

Funny Bunny Fiesta Feast

 

1 (2-1/4 ounce) package of cut carrots

1 (2-1/4 ounce) package of cut celery

½ tablespoon taco sauce or salsa

tortilla chips

1 cup of your favorite dip

 

Mix the taco sauce or salsa into the dip.  Place the dip in the center of a medium size serving tray.  Arrange the carrots, celery, and chips around the dip.  Ole’, you can scoop away!
